SUPERFOOD SNACK BAR MIX
Detailed Baking Instructions
Makes 12 Rectangle Bars or 20 Square Bars Per Packet
Required
- Superfood Snack Bar Mix
- 85g Butter
- 50g Honey (Approx 2.5 Tablespoons)
- Alternatively, you could use 40g Coconut Oil and 90g Rice Malt Syrup or Maple Syrup.
- Standard Lined Baking Tray - Approx 16 x 26cm or 24 x 24cm
Steps
1. Pre-heat oven to 180ºC degrees (150ºC fan forced). Grease and line baking tray with baking paper.
2. Combine butter and honey (or coconut oil and rice malt syrup/maple syrup) into a saucepan. Warm on a moderate / low heat until melted and well combined. This could also be done in the microwave (approx 30 secs on high).
3. Mix all ingredients until well combined, by using a wooden spoon or rubber spatula. Dry ingredients should be totally coated by the butter and honey mixture.
4. Pour mixture into lined baking tray and spread evenly with the back of a spoon. Compact the mixture as much as possible using the back of a large spoon or back of a spatula. The mixture needs to be firmly packed into tray and looking flat on top.

5. Bake on the low shelf of the oven for 15 minutes, or until golden brown.
6. Allow the slice to cool completely, for minimum 15 minutes. Once the slice is cool and hard, lift out of the tray (using the baking paper).
7. Use a sharp knife to cut the slice into your preferred sizes.
8. Serve immediately or store in a airtight container in the fridge.

PROTEIN POWER BALL MIX
Detailed Instructions - No Baking Required
Makes 15 - 20 Balls Per Packet
Required
- Protein Power Ball Mix
- 30g Coconut Oil (2 Tablespoons)
- ½ cup boiling water
- 1 cup Fresh Dates*, (8-10 Dates)
Steps
1. Pit all the dates, then soak in boiling hot water for 10 minutes
2. Melt Coconut OIl, in saucepan or microwave.
3. In a large bowl, combine Funch mix, ½ cup boiling water and coconut oil. Let stand for 5 minutes.
4. Strain dates then mash thoroughly with a fork. As an option you could use a food processor to mash the dates.
5. Mix all ingredients together. You will need to get your hands dirty (or use plastic food handling gloves) and really squish the mixture together to ensure it is all combined, and pliable. The dry ingredients should be all coated by the date and coconut mixture.
6. Use a tablespoon scoop (approx 20-25g) of mixture and roll into a tight ball with your hands. You can get really creative here. Roll the balls in desiccated coconut, cacao nibs, raw cacao powder or goji berries to finish off and put your own spin on them.
7. Place rolled balls into the refrigerator to firm up.
8. Store in an air-tight container in the fridge, or freeze for up to 3 months. You can eat the Protein Power Balls straight from the freezer, awesome in summer!

- 30g Coconut Oil (2 Tablespoons)
- 2-3 tablespoons boiling water
- 1 cup Fresh Dates*, (8-10 Dates)
